Ros is a rare, sweet passito made from Moscato di Scanzo, a local grape that Castello di Grumello carefully preserves. The vineyards are on marly limestone soils with a southwest exposure at 250-300 metres altitude. Old vines (45 years on average) produce low yields and concentrated fruit, which gives this passito its depth and refinement. The result is an intense but perfectly balanced sweet wine: rich and enveloping, without being cloying.
After manual harvest, the bunches dry for 25-30 days in the fruttaio with forced ventilation, concentrating sugars and aromas. The grapes are then traditionally destemmed and fermented at 28-30 °C in stainless steel, with 10-12 days of skin soaking with remontage and pigeage. Aging takes place in inox to preserve aromatic purity; after bottling, the wine rests in bottle for 3-5 months.
In the glass, Ros is deeply and seductively aromatic: sweet but never unwieldy, with notes of black cherry and wild berries, carried by spicy accents of clove and floral notes of violets. On the palate, the wine is rich and full-bodied, with a wonderful balance between sweetness and freshness. A true meditation wine that also shines alongside chocolate and works surprisingly well with powerful cheeses and game.
