This Grechetto IGT Umbria is a dry, characterful white wine from certified organic vineyards on the sunny south-facing slopes of Umbria, at an altitude of 490 to 530 metres. The soil consists of sedimentary clay, gravelly sand and alluvial silt containing marine fossils from the Middle Pliocene, a unique, ancient seabed terroir that gives the wine its characteristic minerality. The hand-harvested Grechetto grapes are destemmed and pressed immediately, then fermented at a controlled temperature of 15°C for 15 to 20 days. The wine is then aged for 5 to 6 months in stainless-steel tanks, followed by two months’ bottle ageing before release.
In the glass, the Grechetto displays a bright straw-yellow colour. The nose is richly aromatic thanks to the grape’s thick skin, with notes of citrus, melon and an intriguing shell-like minerality. On the palate, the wine is fresh, balanced and full-bodied, with a pleasant structure and a persistent finish featuring a typical, slight almond bitterness characteristic of Grechetto.
As a versatile dining wine, Grechetto is an excellent accompaniment to seafood and shellfish, grilled fish, pasta with fish, white meat and fresh cheeses such as young pecorino. It also works very well as an aperitif or with light summer dishes and salads.
