The Maxim 2025 is a refined and fresh Garnacha Blanca from La Canetana, from the young Ermita vineyard, planted in 2021. Located on sandy loam soils with slight stone influences, this vineyard produces grapes with a nice balance of ripe fruit and lively acidity. Careful manual harvesting and rigorous selection produce a wine that exudes purity and precision.
After harvesting, the grapes undergo 48-hour cold peeling, followed by partial pressing and fermentation in inox tanks at low temperature. Some of the wine also undergoes malolactic fermentation, which adds extra roundness. The wine then ages for five months "sur lie", gaining structure and complexity without losing its fresh character.
In the glass, the wine presents itself clear and light straw yellow. The nose is expressive and fruity, with aromas of apple, pear and tropical fruits such as pineapple and mango. On the palate, it is elegant and slightly creamy, with subtle viscosity and fresh acids that provide balance and drinking pleasure. A modern and accessible white wine with finesse and character.
