Domaine Gilg's 2023 Sylvaner Grand Cru Zotzenberg is a special wine from the historic Grand Cru Zotzenberg in Mittelbergheim, one of the few Grand Cru terroirs in Alsace where Sylvaner is officially permitted. The vineyards are on marno limestone-rich slopes with a south- to south-east exposure at altitudes between 220 and 350 metres, ensuring optimal ripening and a distinct mineral structure. The grapes are grown according to organic viticulture, with traditional tillage and natural vegetation between the rows. Harvesting is entirely by hand, selecting only perfectly ripe and healthy grapes.
In the cellar, vinification is chosen that allows the character of the terroir to speak as purely as possible. The grapes are gently pressed as whole bunches, after which the juice is statically clarified for 24 hours. Fermentation takes place in thermally controlled stainless steel tanks for about 15 to 20 days. The wine then matures for about 10 months in inox, fully preserving its aromatic finesse and minerality. With 14.5% alcohol and a slightly demi-sec style, the wine gains extra roundness and depth without losing its fresh structure.
In the glass, this Grand Cru shows a bright golden yellow colour. The aroma opens with delicate floral notes, followed by subtle mineral nuances. On the palate, the wine comes across as elegant, intense and harmonious, with pronounced aromatic power and a long finish in which minerality and a light, characteristic bitter note come together. This Sylvaner is a true gourmet wine, perfect with refined starters, aperitif moments and mature cheeses.
