The "Tasso" Lambrusco Grasparossa di Castelvetro DOP Rosso is a wine that expresses the character of the Lambrusco Grasparossa in its purest form. With great respect for the environment and careful organic cultivation, Fattoria Moretto preserves the natural quality of the grape. The passion and attention at every stage of vinification result in a wine that is vibrant, aromatic and elegantly sparkling - a tribute to Castelvetro's terroir.
The wine is made from 100% Lambrusco Grasparossa di Castelvetro, from organically certified vines 15 to 25 years old, rooted in calcareous and clay-rich soils. After a short maceration of four to six days under controlled temperature, fermentation in stainless steel follows, followed by secondary fermentation via the Charmat Lungo method. This method produces a deep ruby colour, intense fruit aromas of cherries and blackberries, and a fine mousse that finishes elegantly.
The Tasso Lambrusco is an authentic, versatile wine that shows its best side with traditional Emilian dishes. Serve it lightly chilled with tagliatelle al ragù, roast rabbit or cured meats, where its freshness and soft tannins perfectly balance savoury flavours.
