The "Monovitigno" Lambrusco Grasparossa di Castelvetro DOP is an expressive and refined wine that reflects the character of one exceptional vineyard plot. In the glass, it shines with a cardinal red colour and a lively mousse. The nose opens with an elegant interplay of red fruits, blackberry and wild strawberry, intertwined with floral notes of rose and peony, subtly supported by spicy and mineral nuances that add complexity.
This wine is made entirely from Lambrusco Grasparossa di Castelvetro, sourced from more than 40-year-old vines grown organically in one selected plot - a monoparcellare with unique identity. A four- to six-day maceration at controlled temperature and fermentation in stainless steel produce a wine with a juicy, balanced structure and lively freshness. The low yields and age of the vines provide depth, finesse and a long, fruity finish that beautifully reflects Castelvetro's terroir.
The Monovitigno Lambrusco is a wine with personality and gastronomic versatility. It goes extremely well with fine meats, roast suckling pig or other savoury dishes of Emilian cuisine, where its freshness and aromatic layering provide perfect harmony.
