The "Canova" Lambrusco Grasparossa di Castelvetro DOP is a lively and characterful wine that embodies the heart of Emilian tradition. In the glass, it shows a deep purple colour with a delicate mousse, while the bouquet opens up with youthful aromas of red currant, wild strawberry and a hint of geranium. The palate is dry, fresh and mineral, with a pleasant, playful bubble that caresses the palate and invites the next sip.
Sourced from more than 50-year-old vines, this wine is produced entirely from Lambrusco Grasparossa di Castelvetro grown organically on soils of red clay and loam. The grapes are harvested by hand and undergo a four- to six-day maceration at controlled temperature, followed by fermentation in stainless steel. Low yields per hectare and the use of indigenous yeasts ensure a pure expression of terroir, with a perfect balance of fruit, structure and freshness.
The Canova Lambrusco is a wine full of energy and authenticity, ideal for pairing with dishes of local cuisine. Its lively acidity and delicate mousse make it particularly suitable with sausage or spareribs stews, but it also comes into its own with rich pasta dishes or charcuterie.
