The Salento I.G.P. Primitivo Rosso Freddo “Nero di Sole” is made from grapes from uncertified, non-irrigated organic farming. The grapes are hand-picked a bit early and processed fully under controlled temperatures. This gives a Primitivo with a balanced, smooth taste that’s pleasant even in summer, straight from Salento.
This wine comes from Grottaglie. The Primitivo grapes grow in the leaning sapling system, and there are 7,000 bottles of 0.75 liters. The winemaking happens under strict conditions, resulting in a ruby red color with violet hues and 12.5% alcohol. It’s a fresh take on a classic red wine.
The smell has violet and rose, plus cherry, blackberry, currant, and plum. The taste is a perfect mix of acidity and flavor, with softness that feels good even in summer. It’s great as an aperitif and goes well with pizza, seafood dishes, and typical Mediterranean meals.
