Collemarco embodies Ruffo della Scaletta’s most daring challenges: the desire to push boundaries and reach uncharted heights. It was from this desire that the idea for this wine was born, crafted from Bordeaux varieties that have proven to thrive exceptionally well in the Umbrian terroir — Cabernet Franc and Cabernet Sauvignon.
The fully ripe grapes are fermented without the addition of yeast cultures. The prolonged maceration and subsequent ageing in French oak barrels, for at least 24 months, give this wine extraordinary intensity, structure and depth. This is a substantial, full-bodied wine with silky tannins. In the glass, Collemarco displays an intensely concentrated colour. The nose offers rich aromas of ripe fruit, both red and black berries, complemented by elegant notes of toast and delicate spices. On the palate, the wine is powerful and substantial, yet light, silky and substantial.
This is a substantial wine that calls for substantial dishes. Meat dishes are always a good match, particularly grilled meats. Truffles and game are also memorable pairings.
