The 2024 Chardonnay Auslese is a lush, edelsüße speciality from Wein & Sektgut Hirschmüller, sourced from loess loam on Muschel limestone, a soil that brings out both tension and finesse in sweet wines. The grapes were not harvested until November 2024, when they had reached optimum concentration and ripeness. Gentle pressing was followed by a chilled fermentation in stainless steel, which was deliberately stopped at 60 grams of residual sugar. The wine then matured on fine lie until April 2025, giving it its soft texture and aromatic depth.
On the nose, this Auslese presents itself rich and expressive, with fragrant notes of ripe pineapple, honeydew melon and maracuja, complemented by sultanas and delicate rose blossom. The palette follows this seamlessly: bright fruit, elegant sweetness and lively acidity create an exciting palate that keeps the wine fresh despite its lush style. The low alcohol of 10 per cent gives the wine extra nimbleness, making it long and refined aftertaste.
The 2024 Chardonnay Auslese is versatile. It is delicious as a solo, but also shines alongside powerful starters, spicy or aromatic cheeses and subtly sweet desserts such as panna cotta, citrus cake or fruit crumble.
