This Pet Nat from Vignobles Mallard is a playful, natural sparkling wine that shows how pure bubbles can be. The vineyard (2 hectares) lies on argilo-limestone-rich soils, which gives the wine its fresh tension and slight saltiness. The style is unpolished and lively: a new adventure in the world of bubbles, made for sharing.
The wine is made from 100% Sauvignon Blanc and vinified according to the méthode ancestrale, with no additives and no sulphites. Fermentation is temporarily halted by cooling before bottling; in the bottle, fermentation resumes and natural carbon dioxide pressure is created. The result is a Pet Nat with fine mousse, pure fruit and texture from the lie.
In the glass, the colour is pale gold with green reflections and a string of fine bubbles. The nose is fruity with notes of peach and apricot, moving into creamy accents of butter and brioche. On the palate, the wine is fresh and playful, with soft creaminess and a lively, natural sparkle.
