The Grauburgunder from Enderle & Moll is anything but the heavy, high-alcohol Pinot Gris you might expect. This is a crisp, lively and distinctive expression of the grape variety, shaped by the mineral-rich Baden soil and Florian Moll’s no-nonsense approach.
The wine is made without pumping over, without fining and without filtration. Everything is done by hand, using only what nature provides. In the glass, the Grauburgunder displays a light, clear colour with a red glow, characteristic of this grape variety. The nose is cooler than you might expect: red and black berries, a hint of pepper, fresh chanterelles, moss, juniper and subtle smoky notes. On the palate, it is crisp and juicy, with nutty and herbaceous flavours, lively acidity, plenty of grip from ripe tannins, and a long, mineral, savoury finish with liquorice and a hint of coffee in the background.
Surprisingly versatile with food. It pairs well with grilled poultry, mushroom dishes, stuffed pasta or lightly spiced meat dishes. Serve at 11–13°C.
