This Sancerre Blanc from Domaine des Côtes Blanches is a pure expression of the terroir around the village of Bué, in the heart of the Loire Valley. The wine is made from 100% Sauvignon Blanc sourced from a mosaic of plots with calcareous soils, including caillottes, Buzançais limestone and the famous terres blanches. These different soils give the wine its characteristic minerality and tension. The vines, ranging from young plantings to older vines of 25 years, are planted on sunny slopes between 220 and 290 metres altitude, where they benefit from an ideal south to south-west exposure.
In the vineyard, the estate works according to organic, biodynamic and regenerative principles. The focus is on healthy soils, biodiversity and minimal intervention. The same philosophy continues in the cellar: the grapes are slowly pressed with a pneumatic press and no sulphur is added during vinification. The wine then ages for five months on fine lie in stainless steel tanks. Bottling is done by gravity and only light filtration is applied, preserving the pure character of the wine.
The result is an elegant and lively Sancerre with fresh citrus aromas, subtle spiciness and a distinctive chalky minerality. On the palate, the wine is tight and refined, with fresh acidity and a long, refreshing finish. This wine goes beautifully with oysters, seafood, grilled fish and fresh salads with goat cheese. It also makes a perfect, refined companion with sushi or light vegetable dishes.
