The Sancerre Rosé Le Crot à l'Âne is a refined and characterful rosé from a specific plot in the village of Vinon, within the Sancerre appellation. This wine is made from 100% Pinot Noir from approximately 40-year-old vines, planted on soil composed entirely of flint (flint). This unique soil gives the wine a distinctive minerality and lively freshness. With a limited production of about 4,400 numbered bottles, Le Crot à l'Âne is an authentic and terroir-driven expression of this special vineyard.
The vineyards are managed according to organic, biodynamic and regenerative farming principles, focusing on the preservation of biodiversity and healthy soils. Through Guyot-Poussard pruning, natural compost and careful work in the vineyard, grapes of optimal quality are obtained. Minimum intervention is used in the cellar: the grapes are slowly pressed with a pneumatic press and no sulphur is added during vinification. The wine is then aged for six months on fine lie in stainless steel tanks, providing additional structure and aromatic refinement.
In the glass, Le Crot à l'Âne presents itself with fresh aromas of strawberry, raspberry and red berries, complemented by subtle floral notes and a slight mineral tension coming from the flint soil. On the palate, the wine is elegant and lively, with fresh acidity and a long, refined finish. This gourmet rosé pairs excellently with grilled fish, seafood and fresh summer salads. Its fresh and elegant character also comes out beautifully with Mediterranean dishes, light barbecue dishes or as a refined aperitif.
