The Sancerre Blanc Les Grands Champs is an elegant and terroir-driven cuvée from a special plot in the commune of Sancerre. This wine is made from 100% Sauvignon Blanc, from around 30-year-old vines growing on the chalky calcaires de Buzançais. This rare soil, combined with a location at around 280 metres altitude, gives the wine a distinct minerality and refined tension. With a limited production of around 15,000 bottles, this cuvée remains a pure and authentic expression of this particular terroir.
In the vineyard, the estate works according to organic, biodynamic and regenerative principles, with great attention to soil life and biodiversity. The vines are pruned according to the Guyot-Poussard method and fed with natural compost to enhance the vitality of the soil. The cellar uses minimal intervention: the grapes are slowly pressed with a pneumatic press and no sulphur is added during vinification. The wine is then aged for 10 months on fine lie in stainless steel tanks, adding complexity and texture.
The result is a refined and expressive Sancerre with aromas of citrus, ripe lime, white flowers and a subtle stony minerality. On the palate, the wine is lively and tight, with fresh acidity, elegant structure and a long, mineral finish. This wine pairs excellently with oysters, seafood, grilled fish and refined dishes with goat cheese. Its fresh and gourmet character also comes into its own beautifully with sushi, ceviche or light Mediterranean dishes.
