Product description
Viv Winery's L'Onirico Assaggiatore is the beating heart of the estate - a wine that captures the soul of the Monferrato hills in one bottle. Made from 100% Barbera, the grape that has been central here for generations, this wine tells the story of tradition, terroir and pure craftsmanship. It is a wine that does not try to impress, but rather convinces with its honesty and expression.
The grapes grow on heavy clay soils of marine origin and are harvested by hand when fully ripe. After destemming, a 15-day maceration follows, followed by spontaneous fermentation with indigenous yeasts, without temperature control. The wine then matures in stainless steel, without filtering or clarification and with minimal sulphites, fully preserving the pure character of the Barbera.
In the glass, this wine is intense red with purple reflections and a lively aromatic profile. Red fruit, violets and a mineral touch form the base, complemented by subtle spiciness and light toasted notes - despite the lack of wood aging. Fresh acidity and soft tannins provide balance and drinkability, while structure and depth give the wine character. An inviting, warm wine that is both accessible and layered.
