Made from 100% Dolcetto, sourced from manually cultivated vineyards on heavy clay soils, Viv Winery's philosophy remains here too: minimal intervention and maximum expression. After a short skin soaking, spontaneous fermentation starts with indigenous yeasts. Just before fermentation is complete, the wine is bottled so that it continues in the bottle - providing the natural, light sparkle.
In the glass, Rocky is juicy and direct, with notes of black cherry and plum. Slightly effervescent, dry and low in alcohol, this wine makes the ultimate thirst-quenching red. Serve it well-chilled and discover how refreshing a red wine can be. This is not a wine to analyse, but to enjoy.
