Auxerrois is a grape variety you don’t come across everywhere, but it thrives in Baden. Related to Pinot Blanc and Chardonnay, but with a character all of its own that lies somewhere in between: yellow fruit, nutty notes and a hint of warmth. Enderle & Moll craft a wine that does full justice to that character.
Produced without pumping over, racking or filtration, the wine matures in neutral oak to develop a full, rounded expression. In the glass, the Auxerrois is clear and golden-yellow. The nose is nutty and subtly yeasty, with restrained core fruit notes, yellow herbs, floral hints and earthy notes. On the palate, it has a firm structure, with ripe yellow fruit, nutty and yellow-spiced aromas, a fine acidity and a noticeable grip from ripe tannins. There is some warmth and creaminess, distinct minerality and a dry, juicy, spiced finish with smoky notes.
A wine that pairs well with rich grilled poultry, lobster dishes, mature cheeses or savoury tarts. Serve at 11–13°C.
