Product description
Since 1979, Praeclarus has been synonymous with harmony and freshness. The Chardonnay grapes for this exceptional sparkling wine are grown around San Paolo, at an altitude of 300 to 500 metres on the limestone-rich dolomite cliffs of the Mendel, with sandy and clay soils. The south-eastern aspect, constant ventilation from mountain winds and the significant temperature differences between day and night create a unique microclimate in which the grapes develop an ideal balance between acidity and sugar.
The grapes are hand-picked and gently pressed as whole bunches. The base wine matures for several months in stainless steel, after which a second fermentation takes place in the bottle using the traditional method. The wine then matures for at least 24 months on the fine lees, which gives it its elegance and complexity. In the glass, the Praeclarus Brut is a clear golden yellow with a radiant sheen. The aroma is intense and exceptionally refined: almond blossom, peach and apricot with hints of fresh hazelnuts and bread crust. The bubbles are exceptionally fine and persistent.
