The 'Pezza della Chiesa' Primitivo IGP Salento is a deep, concentrated red wine made from 100% Primitivo grapes sourced from more than 60-year-old vines planted as traditional Alberello (bush shape). The grapes are harvested in early September while still drying on the plant, creating an exceptional richness of aromas and sugars. During fermentation, some of the natural sugars are retained as fermentation stops spontaneously at an alcohol content of around 16%. The result is a powerful, velvety wine with a pleasant residual sweetness and an alcohol content of 16+2%.
Maturation takes place in old, traditional terracotta jars (capasoni) and in bottle, giving the wine its characteristic depth and softness. In the glass, it shows with an intense ruby red colour and purple reflections. On the nose, it opens with complex aromas of ripe red fruit, black cherries and a hint of cedar. On the palate, it is full, soft and harmonious, with a firm structure and a long, pleasant finish.
This particular Primitivo pairs well with rich starters, meat dishes, mature cheeses and even dry patisserie. Serve at a temperature of 16-18 °C for the best experience of this powerful and accessible wine from the heart of Salento.
