The Sancerre Blanc Le Vallon is an exceptional single-vineyard wine from the Sancerre appellation, from a small plot in the commune of Sancerre itself. This cuvée is made from 100% Sauvignon Blanc from impressively old vines averaging 60 years old. The vines grow on deep Kimmeridgian clay soils, rich in chalk and fossil marine deposits. This unique soil structure gives the wine exceptional concentration, depth and pronounced mineral tension. With a production of only about 2,500 numbered bottles, Le Vallon is a rare and characterful expression of this special terroir.
The vineyards are managed according to organic, biodynamic and regenerative farming principles, with great attention to biodiversity and the preservation of vibrant soil. Traditional pruning according to the Guyot-Poussard method, the use of natural compost and careful vineyard management ensure healthy vines and optimal grape quality. In the cellar, the wine is vinified with minimal intervention: the grapes are slowly pressed with a pneumatic press and no sulphur is added during vinification. The wine is then aged in large acacia wood barrels (semi-muids), which adds complexity, structure and subtle aromatic depth.
In the glass, Le Vallon presents itself with delicate aromas of citrus, ripe lime, white flowers and a subtle herbal touch. The deep mineral structure is nicely supported by elegant acidity and a long, complex finish. This gourmet Sancerre pairs excellently with refined fish dishes, scallops, lobster and other seafood. Its rich and complex character also comes into its own beautifully with poultry dishes, creamy sauces or soft cheeses.
