'Los Caprichos de Paco' Espumoso Blanc de Noirs Brut Nature

Los Caprichos de Paco Espumoso Blanc de Noirs Brut Nature is a unique sparkling wine made entirely from Cabernet Sauvignon, with the red grapes vinified as if they were white. After 18 months of ageing on the fine lees in the bottle, the result is an elegant Brut Nature with a refined mousse, striking freshness and surprising aromatic depth.

The base wine is made with minimal skin contact to prevent colour extraction. This is followed by a slow fermentation and a second fermentation in the bottle using the traditional method. The wine is then aged for 18 months ‘sur lie’, which adds extra complexity, creaminess and an exceptionally fine bubble. The grapes come from high-altitude Cabernet Sauvignon vineyards at an altitude of approximately 950 metres.

In the glass, the wine glistens with a pale straw-yellow colour, green reflections and a persistent, fine mousse. The bouquet combines fresh red berries with dried flowers, fennel, subtle notes of black fruit and elegant brioche aromas. The palate is fresh, crisp and refined, with lively acidity, a creamy texture and a long, mineral finish. Perfect as an aperitif, but also excellent with shellfish, sushi, fish, rice dishes and soft cheeses.
