Los Caprichos de Paco Blanc de Noirs is a unique white wine made from 60% Pinot Noir and 40% Merlot. By vinifying blue grapes as a white wine, a surprising Blanc de Noirs is created that combines the freshness of a white wine with the depth and structure of red grapes. Only 1,000 numbered bottles of this exceptional cuvée have been produced.
The grapes are harvested by hand and chilled before being gently pressed, ensuring that hardly any colour is extracted from the skins. Following alcoholic fermentation, the wine matures for 90 days on the fine lees with gentle micro-oxygenation in an Ovoid barrel, followed by at least twelve months’ bottle ageing. This lends the wine extra complexity, creaminess and a refined structure.
In the glass, the wine displays a very pale straw-yellow colour with subtle highlights. The aroma combines ripe red and white fruit with apple, light autumnal notes and elegant brioche. The palate is fresh, creamy and well-balanced, with lively acidity, a subtle hint of bitterness and a long, refined finish. Delightful as an aperitif and excellent with fish, shellfish, rice dishes, white meat and creative dishes.
