Los Caprichos de Paco Espumoso Chardonnay Brut Nature is an elegant sparkling wine made from 100% Chardonnay, produced using the traditional method. After ageing for no less than 24 months on the fine lees, this Brut Nature develops an exceptionally refined mousse, a creamy texture and impressive complexity.
The Chardonnay grapes come from high-altitude vineyards at around 950 metres above sea level. Following a cool fermentation, the base wine matures for six months on the fine lees to develop extra depth and body. The wine then undergoes a second fermentation in the bottle and matures for at least 24 months ‘sur lie’, resulting in an elegant mousse and refined brioche notes.
In the glass, the wine glistens with a pale straw-yellow colour, golden highlights and a persistent, very fine mousse. The bouquet offers aromas of ripe peach, quince, dried flowers and a subtle hint of cedar, harmoniously interwoven with notes of freshly baked brioche. The palate is fresh, creamy and full-bodied, with lively acidity, a rich texture and a long, elegant finish. Perfect as an aperitif, but also excellent with shellfish, fish, rice dishes and soft cheeses.
