The Weissburgunder ‘Sphère’ is Enderle & Moll’s most ambitious white wine. Whilst the Muschelkalk derives its strength from its unique soil, the Sphère draws its strength from its ageing: long, patient and in neutral oak, enabling the wine to achieve a depth and complexity rarely found in Weissburgunder.
Produced without pumping, racking or filtration. In the glass, the Sphère is clear and light gold in colour. The aroma is more robust and distinctly nuttier than that of its little brother, the Muschelkalk: stone fruit, citrus, a subtle hint of egg white, fresh mushrooms, a fleeting note of butter, root vegetables, vanilla and a light floral undertone. On the palate, it is both robust and refined, with nutty, yeasty and distinctly vegetal flavours. The acidity is lively, with plenty of grip from ripe, soft tannins and a buttery, slightly resinous background. The finish is very long and lingers on the palate.
A wine that demands and deserves attention. Delicious with richer fish dishes, pan-fried sweetbreads, truffle risotto or mature soft cheeses. Serve at 11–13°C.
