Cantina Toniolli's Pinot Nero is an elegant red wine from the Valvaledi vineyards in Cembra, at an altitude of over 600 metres. This wine is produced entirely from Pinot Nero grapes growing on pergolas on the steep terraces of the Dolomites. Grape yields are deliberately limited to 75 quintals per hectare, considerably lower than the permitted amount, to ensure concentration and quality.
Vinification takes place in stainless steel tanks at controlled temperature, followed by refinement in barrique and in bottle. This process gives the wine its soft structure and refined aromas. In the glass, the wine shows a light ruby red colour. The aroma is pleasantly fruity with clear notes of cherry. On the palate, the wine is dry and fresh, with a soft vanilla note and a velvety finish thanks to the wood aging.
This Pinot Nero is an excellent companion to tasty meat dishes such as pork, lamb and game. Serve this wine preferably at 18°C to fully appreciate its complexity and finesse. A harmonious red wine with a mountain character that is both refined and drinkable.
