Rosbatù is Corvée's elegant and subtle rosé, born from the heart of the Cembra Valley in Trentino. The name is a playful contraction of "rosa" and the local dialect word "sbatù", which stands for a pale colour. The wine lives up to its name with its delicate, pale pink hue and an expression that reflects the fresh mountain air and finesse of the Dolomites.
This rosato is made from a blend of Pinot Nero, Lagrein and Schiava, three noble grape varieties from the region. The grapes are picked with precision, gently pressed using the 'a lacrima' method, and then fermented in stainless steel. The wine then matures for six months on fine lees in used 225-litre French barriques, followed by a further six months of bottle rest. The result is a refined, structured rosé with floral aromas of roses and violets, complemented by wild myrtle and a hint of spiciness. On the palate, it is lively, mineral and surprisingly complex, with a delicate balance of juicy red fruit and a subtly saline finish.
Rosbatù is a delicious accompaniment to light summer dishes such as grilled vegetables, beef or tuna carpaccio, Mediterranean salads, and soft cheeses. Also excellent with fusion dishes with Asian influences. Serve lightly chilled, between 10 and 12°C, to fully show off its elegant freshness. A rosé with the soul of the mountains.
