Cantina Simoni's Gewürztraminer is an aromatic white wine from the hills of Pressano and Ceola di Giovo in Trentino, on the southwestern flanks above the Avisio river. These sunny and well-ventilated vineyards lie at an altitude of 200 to 300 metres and are characterised by clay and porphyry soils, which contribute to the wine's rich flavour profile. The vines, between 10 and 15 years old, are grown using the traditional pergola trentina and guyot systems.
The grapes are harvested by hand and undergo a gentle, slow pressing whole to maximise the aromatic potential of the Gewürztraminer. Fermentation and aging take place in stainless steel tanks, with the wine resting on fine yeasts for six months to develop structure and complexity. After a further two to three months of bottle aging, the wine is ready for sale. The result is an expressive wine with floral and spicy notes, typical of this aromatic grape, with a nice balance between richness and freshness.
This wine is excellent with spicy Asian dishes, foie gras, cheeses with pronounced flavours or dishes with exotic fruits. It also makes a surprisingly harmonious pairing with white meat or creamy starters. Serve chilled between 8 and 10°C to fully enjoy its aromatic character.
