Corvée Brut is a refined and elegant sparkling wine from the Val di Cembra, where the Chardonnay grapes are grown on steep slopes above 550 metres altitude. The combination of deep, sandy soils with lots of stones and the large temperature differences between day and night ensures slow ripening of the grapes and optimal build-up of minerality and aromas.
Vinification begins with a careful manual harvest in early September. After gentle pressing and static settling, the must ferments in stainless steel tanks at controlled temperature. The base wine then ages for six months on fine yeasts in French oak barrels of second and third use. The wine then undergoes second fermentation in bottle, according to the Metodo Classico, with aging for more than 36 months on the lie.
The result is a Trento DOC Brut that immediately charms with its fine mousse and delicate aroma of ripe quince, apricot, pear, vanilla cream and white chocolate. On the palate, a rich and persistent palette unfolds with subtle notes of almond, strudel and dried fruit. Corvée Brut is an expression of the power and finesse of the Dolomites, perfect as a festive aperitif or as an accompaniment to sophisticated dishes.
