Product description
This special wine is made from Schiava Nera, from vines planted in the 1950s in the Valvalè vineyards of Cembra, at an altitude of 450 metres with an east-southwest exposure. The vines grow according to the Pergola Trentino system on clay-rich soils and produce a low yield of 50 q.li/ha. A unique feature of this wine is that the grapes partially dry on the vine, creating a concentrated flavour profile. Harvesting takes place manually in October with careful selection of the bunches.
A gentle bruising is followed by a 20-day fermentative skin maceration at temperatures between 20 and 24°C. During this period, the must is pumped over twice daily for additional extraction. The wine then matures for five months in stainless steel tanks and one more month in bottle. The result is a ruby red wine with subtle purple hues. The aroma is ripe and slightly fruity, with fine notes of red fruit and floral accents. The palate is medium-bodied, with soft tannins and a harmonious structure.
Schiava Nera by Nicolodi is ideal for lovers of light red wines with finesse. It pairs beautifully with charcuterie, roasted vegetables, poultry or a risotto with mushrooms. Serve lightly chilled, around 14-16 °C, for an optimal experience.
