Cantina Toniolli's Müller Thurgau is an expressive white wine made entirely from Müller Thurgau grapes grown on the high altitude Cor and Caselle vineyards in Cembra, above 600 metres altitude. The vines grow according to the traditional pergola trentina system, which contributes to optimal ripening. The yield is deliberately limited to 110 quintals per hectare - considerably lower than the DOC standard - to ensure more concentration and finesse in the glass. The wine is vinified and refined in stainless steel at controlled temperature, followed by further maturation in bottle.
In the glass, this Müller Thurgau shows a bright straw yellow colour with green reflections. The aroma is distinctly fruity and aromatic, with fine notes of sage, ripe peach and Golden Delicious apple. The palate is dry and lively, with fresh acidity and a subtle saltiness that provide a refined balance and an elegant finish. The slight acidity gives the wine an invigorating character, perfect for lovers of fresh, aromatic white wines.
This wine comes into its own as an aperitif, but also pairs excellently with Trentino's traditional cuisine. Think refined fish starters, flavoursome fish dishes, creamy mushroom soups or dishes with aromatic herbs. This Müller Thurgau is also an excellent partner with lightly spiced white meat dishes. Serve preferably between 10 and 12 °C to fully experience all its aromatic nuances.
