Cantina Toniolli's Trento DOC is an elegant and refined sparkling wine made entirely from Chardonnay grapes growing on the steep slopes of Moinach, in the Cembra valley. The vineyards are above 600 metres altitude and are cultivated according to the traditional Trentino pergola system. Thanks to the cool mountain air and sparse terroir, the grapes ripen slowly, creating a wine with lively acidity and bright expression.
After gentle pressing, the juice undergoes slow fermentation at low temperature (15-17°C), after which the wine matures on the yeasts for at least 30 months before dégorgement. This lengthy process gives the wine a fine and persistent mousse, with a bright straw yellow colour. In the nose, elegant notes of apple, especially golden delicious, dominate, with clear references to the Chardonnay character. On the palate, the wine is distinctly dry, fresh and structured, with a long and refined finish.
This Trento DOC is an excellent choice as a festive aperitif, but deserves to be served at the table as well. Thanks to its freshness and structure, it pairs effortlessly with refined dishes such as oysters, sashimi, creamy seafood risotto or light poultry dishes. Serve chilled at 10°C to make the most of its refined character.
