Cantina Toniolli's Schiava is a light, charming wine from the high altitude vineyards of Pantec in the Cembra Valley, where the vines grow according to the traditional Trentino pergola system at more than 600 metres above sea level. Made entirely from the indigenous Schiava grape, this wine reflects the fresh mountain character of its origin. Production has been deliberately kept low at just 110 quintals per hectare, contributing to the refined expression of the fruit.
After careful vinification in stainless steel tanks at controlled temperature, the wine matures further in bottle. In the glass, it shows a pale pink colour, a subtle, fruity aroma with refreshing acidity and a gentle hint of tartar. The taste is dry, fresh and supple, with a low alcohol content, making it very approachable and drinkable. This makes it an ideal wine for relaxed moments and informal meals.
Schiava is a real all-rounder at the table. It goes well with light charcuterie, grilled poultry or even game dishes with a mild seasoning. It is also a pleasant companion with a simple lunch or drinks board. Serve this wine preferably lightly chilled, around 14°C, to fully unleash its freshness.
