Cantina Simoni pays tribute to Bepi Simoni, the winery's founder in the 1950s, with 'Zio Bepi'. This characterful red wine is a blend of the native varieties Schiava and Lagrein, from calcareous, porphyric soils along the hills of the Avisio River in Val di Cembra. The vineyards are at an altitude of 500 to 600 metres and benefit from excellent sunlight, which contributes to even ripening of the grapes.
After a careful summer thinning and a manual harvest with bunch selection, the wine undergoes fermentation on stainless steel, followed by an aging of about 12 months in French oak barriques. This results in a harmonious red wine with elegant wood tones, delicate acidity and a silky texture.
Zio Bepi is a wine with depth and distinct character, ideal with game dishes, grilled red meat or mushroom risotto. Serve this wine at 16-18°C to bring out its full expression. An authentic piece of Trentino in the glass.
