The 2022 Cabernet Franc Reserve trocken is a wine of exceptional precision and power, coming from one of Wein & Sektgut Hirschmüller's top locations. The Muschel limestone soil gives the wine its typical freshness and chalky minerality, while yields are drastically reduced as early as summer: only one bunch per shoot, about one kilo of grapes per vine. The grapes are harvested by hand at the moment of perfect ripeness and carefully destemmed before undergoing a maceration of no less than twenty-eight days. During fermentation, the must is submerged three times daily, after which the wine is gently pressed and aged for twenty-four months in new 500-litre oak barrels.
In colour, this Cabernet Franc shows a deep dark blackberry red. The nose opens intense and layered with aromas of blackcurrant, juniper, bay leaf and ripe blackberry, complemented by a subtle smoky tone and refined accents of vanilla and mocha. This combination gives the wine an international character and an instantly recognisable depth. On the palette, the wine presents itself powerful yet elegant, with textured yet round tannins that fill the mouth completely without becoming heavy or tiring. The long ageing in new wood brings extra complexity and length, while the natural freshness of Cabernet Franc provides balance.
The 2022 Cabernet Franc Reserve is a gourmet wine with longevity, ideal for hearty dishes such as game, rack of lamb, entrecote and spicy stews with thyme or bay leaf. Its powerful aromatic profile also comes out beautifully with hard cheeses or dishes with roasted vegetables.
