Hattori Ganzo is a special find from Fattoria Lavacchio, an orange wine based on Chardonnay that was discovered by accident. During cellar work in 2021, a Tava amphora got "forgotten" in the cellar. When it was found and opened years later, its contents turned out to be an unexpected gift: a wine that expresses the essence of the terroir in a whole new way.
The Chardonnay grapes come from vineyards at 450 metres altitude, on soils rich in marl and minerals. After a 30-day maceration on the skins and spontaneous fermentation, the wine matured for almost three years in amphora. The result is a complex and deep character with distinct aromas. On the nose and palate, layers of vegetal and spicy notes unfold, with hints of wasabi, tobacco, broom and chamomile, which together create an intriguing and meditative profile.
Hattori Ganzo is not an everyday wine, but a gastronomic and contemplative experience. It comes into its own after a meal, paired with delicate cheeses, dishes with mushrooms or spicy Asian cuisine. Also pure, as an accompaniment to a meditative moment, it offers a unique journey along the boundaries of taste. Serve at 15-16 °C for an optimal experience.
