The Cedro Riserva from Fattoria Lavacchio is an elegant and structured wine that expresses the character of Chianti Rufina in a pure way. It comes from Sangiovese vines planted in the 1990s and 2000s at 450 metres altitude, on clay- and marl-rich soils. Only an average of 6,000 bottles per year are produced, making this an exclusive selection that reflects the authenticity of the Rufina region.
After the manual harvest in early October, the grapes are carefully destemmed, followed by fermentation and maceration in stainless steel tanks at controlled temperature. The wine then ages for 24 months in large 18-hl oak barrels and then a further 18 months in bottle. In the glass, Cedro Riserva shows intense ruby red, with a spacious, clean and enveloping nose of ripe fruit and light spice. On the palate, it is velvety and full-bodied, with notes of ripe amarena cherries and a hint of cassis. The tannins are well-integrated, powerful but round, providing an elegant, lingering finish.
This Riserva is an excellent choice with stews, grilled game or slow-cooked brasati. Its depth and complexity also come into their own with aged meats and rich pasta dishes. Serve at 18 °C to experience the wine in its full glory; with its ageing potential, it is also an excellent candidate for further aging.
