The Cedro Chianti Rufina from Fattoria Lavacchio is a wine that reflects the great tradition of the Rufina region. The grapes grow at 450 metres altitude on calcareous soils, which give this terroir its characteristic freshness and elegance. With an average production of 25,000 bottles a year, this is a wine that makes tradition and authenticity accessible to a wide audience.
After the manual harvest in late September, the grapes are carefully destemmed, followed by fermentation and maceration at controlled temperature in stainless steel tanks. The wine then matures for 12 months in large 35-hl oak barrels, followed by at least three more months in bottle. In the glass, Cedro shows an intense ruby red colour, with aromas of small forest fruits, roses and violets, delicately complemented by hints of leather and toasted spices.
On the palate, the wine presents itself dry and juicy, with soft and compact tannins and a fresh, lively acidity typical of Rufina. The finish is elegant and persistent. This Chianti Rufina is excellent young as an accompaniment to meals, but develops beautifully with ageing with red meat, poultry and roast dishes. Serve at 18 °C for best expression.
