Il Santo by Fattoria Lavacchio is a refined and exclusive Vin Santo, made from carefully selected Trebbiano and Malvasia grapes growing on historic vineyards in Rufina, at an altitude of around 400 metres. Producing only 1,000 bottles a year, this is a rare wine that perfectly reflects tradition and craft.
After the manual harvest, the grapes are left to dry for 100 days, after which they are gently pressed. The must ferments slowly in small oak barrels of 50 to 100 litres, located in the attics of the fattoria. For five years, the wine matures there in contact with the seasons, developing its unique complexity. The result is an intense amber wine with a rich and refined character.
On the nose, Il Santo reveals notes of sultanas and candied fruit, followed by nuances of honey, vanilla, figs, nuts and coffee. The palate is full and powerful, but perfectly balanced by fresh acids that lighten the sweet richness. The finish is long and silky smooth. This passito is excellent with mature cheeses, fine pastries and dark chocolate. Serve lightly chilled at 10-12 °C.
