Puro from Fattoria Lavacchio is an innovative and natural Chianti, made entirely from Sangiovese and without added sulphites. Since its introduction in 2010, this is the first DOCG Chianti without sulphites, symbolising the estate's innovative and sustainable spirit. The grapes grow at 450 metres altitude in Rufina, on clay- and limestone-rich soils that give the wine its typical freshness and elegance. With an annual production of around 16,000 bottles, this is an expressive wine that combines authenticity and modernity.
After the manual harvest in late September, the grapes undergo natural fermentation with indigenous yeasts and carbonic maceration in stainless steel. Thanks to the absence of sulphites, malolactic fermentation proceeds quickly and the wine remains pure and lively. After about six months of aging in steel, it is bottled to preserve its maximum freshness and integrity. In the glass, Puro shows intense ruby purple, with aromas of blackberries, strawberries and violets.
On the palate, the wine is fresh, juicy and crisp, with an explosion of red fruit and lively acidity. The finish is clean and persistent. Puro is particularly accessible and versatile, pairing effortlessly with all kinds of dishes, from starters to meat dishes and even desserts. With dark chocolate, it shows its most surprising side. Serve it at 16-18 °C, or slightly chilled in summer at 12 °C.
