Product description
Oro del Cedro from Fattoria Lavacchio is a rare and refined dessert wine, inspired by the great Sauternes, but with a distinctly Tuscan soul. It is made from Traminer Aromatico, sourced from vineyards at around 400 metres altitude in Rufina, where chalky soils and the microclimate ensure grapes of exceptional quality. Production is very limited to around 1,000 bottles a year, making this an exclusive and prized speciality.
The grapes are harvested by hand in the second half of October to early November, at a time when they have not yet dried but are affected by the noble Botrytis fungus. Gentle pressing and cold settling are followed by fermentation at 18 °C, which is stopped early to preserve some of the natural sugars. The result is a wine that presents itself in a brilliant golden yellow colour with intense aromas of honey and candied fruit, refined and persistent in the nose.
On the palate, Oro del Cedro is full-bodied, warm and velvety, with rich flavours of dried fruit, vanilla and honey. It combines intensity with elegance and a long, lingering finish. This passito is the perfect companion to blue cheese, foie gras and delicate pastries, such as creamy cakes or dark chocolate desserts. Serve lightly chilled at 10-12 °C.
