Puro PétNat Rosso from Fattoria Lavacchio is a natural, sparkling red wine, made from 100% Ciliegiolo and completely without added sulphites. The grapes grow at 450 metres altitude in Rufina, on clay-rich soils that give the wine its distinct freshness and character. Producing only 2,000 bottles a year, this is an exclusive, artisanal wine that uniquely brings together innovation and tradition.
The grapes are hand-harvested and carefully selected in early September. After gentle pressing and cold settling, the must ferments at low temperature in stainless steel tanks. At bottling, fresh grape juice with natural yeasts is added, allowing the second fermentation to take place spontaneously in the bottle. There is no filtering or disgorging, so the wine remains slightly cloudy and retains its natural character. The result is a lively wine with a deep ruby colour and an energetic mousse.
On the nose, aromas of violets, grapes, strawberries and a hint of sweet mint emerge. On the palate, it shows flavours of pomegranate, raspberry and red plum, supported by fresh acidity and a playful, juicy structure. This PétNat is ideal with summer dishes like grilled chicken, gazpacho, carpaccio or tuna tartare, but also surprisingly good with a barbecue. Serve chilled at 7-9 °C for the most refreshing experience.
