This elegant sparkling wine is a pure expression of high-altitude Chardonnay from Val di Cembra, grown at 600 metres altitude in the cru Faver - one of the region's best-loved vineyards. The soil is stony and rich in porphyry, which together with the fresh mountain air creates wines with tension, finesse and pronounced minerality.
Vinification follows the méthode traditionnelle: the grapes are harvested manually and gently pressed. After cold clarification and temperature-controlled fermentation, the wine matures for 9 months in steel, followed by secondary fermentation in bottle. The wine stays on the lie for as many as 30 to 40 months, with an additional maturation of 3 to 6 months after dégorgement. This long process without dosage (brut nature) produces a complex and refined bubble with lively character.
In the glass, this Trento DOC sparkles straw yellow with a fine, persistent mousse. The bouquet reveals floral notes of chamomile, ripe peach, citrus, spices and a hint of chalk. On the palate, it is lively and fresh, with a briny minerality and a balanced structure that makes for a long and elegant finish.
This spumante is the ideal accompaniment to sophisticated dishes from the sea, such as oysters, scallops or sea bass tartare. Also delicious as an aperitif or with light starters with citrus notes and fresh herbs. A sparkling and characterful wine for special moments.
