The Sancerre Rouge Les Rimbardes is a characterful single-vineyard wine from Bué, one of the most prestigious terroirs within the Sancerre appellation. This cuvée is made from 100% Pinot Noir from impressively old vines of around 60 years old. The vines grow on Kimmeridgian clay soils, rich in limestone and fossil deposits, which are renowned for their ability to produce wines with depth, structure and pronounced minerality. With a limited production of only about 2,500 numbered bottles, Les Rimbardes is a rare and terroir-driven expression of this special plot.
The vineyards are managed according to organic, biodynamic and regenerative farming principles, with great attention to biodiversity and the preservation of healthy soils. Traditional Guyot-Poussard pruning, the use of natural compost and careful work in the vineyard contribute to grapes of exceptional quality. In the cellar, the wine is vinified with minimal intervention: alcoholic fermentation occurs spontaneously with natural yeasts and some of the grapes are processed as whole bunches to create extra complexity. No sulphur is added during vinification. The wine is then aged for 12 months in a combination of stainless steel tanks and French oak barrels, adding structure and finesse.
In the glass, Les Rimbardes presents itself with delicate aromas of ripe cherries, raspberries and red berries, complemented by subtle spicy and earthy notes typical of the terroir. The wine has an elegant structure with fine tannins, fresh acidity and a long, mineral finish. This gourmet Pinot Noir pairs excellently with poultry, veal and refined meat dishes. Its elegant and complex character also comes out beautifully with mushrooms, grilled vegetables or soft cheeses.
