The 708 km Trento DOC Extra Brut is a sophisticated sparkling wine made from 100% Chardonnay, from terraced vineyards in the Cembra valley at an average altitude of 550 metres. The vines are planted on porphyry soils with a southeast exposure, and are tended according to the Trentino pergola and guyot system. At 90 q/ha, yields are well below the permissible standard, which benefits the quality of the grapes.
Gentle pressing is followed by slow fermentation at low temperature. Second fermentation takes place in bottle, after which the wine matures for no less than 30 months on the lie. The result is a straw yellow wine with a fine and persistent mousse. The bouquet is elegant, with aromas of golden apple, subtle yeast notes and a pronounced minerality coming from the porphyry terroir. On the palate, this Trento DOC shows freshness, structure and long persistence, with a balanced combination of liveliness and finesse.
This wine is the sparkling ambassador of the unique terroir of the Cembra Valley, where 708 kilometres of dry stone walls shape the landscape.
